How to change the install path?

Alright so I'm brand new to linux, and Zorin. Just built my first pc, and I went ahead and used boot drives. Can someone help me with a few things?
1. How do I change the default install location to where things I want installed won't be installed on the boot drive?
2. How do I change a filesystes to be mounted with execute permissions?
3. How come I try to change any properties on the nonboot drive hard drive, it automatically switches back without me doing anything?
I appreciate all the help I can get.

Your best route is to choose the 'something else' method - if you have external drives or any usb connected drive you are advised to disconnect, just to be on the safe side - the installer will ask you to 'unmount' any external drives (including USB sticks). The only other question I need clarity on, is Zorin to be the only OS or are you dual-booting? :D
