I noticed that the system tray clock doesn't allow itself to be changed and only synchronizes to internet time. Am I wrong?

I think you are not wrong. There may be other clocks you can install and use that you have more control over, however.
The default clock is synced to net time and you can change that by changing your time zone settings- if you want. I THINK it just relies on the "time %I/M/S" command.

Thanks. I'll try using the date -s command here https://www.computerhope.com/unix/udate.htm if I feel the need but I'll leave it alone for now.
